These Chocolate and Coffee Madeleines are like no other, I mean…you have that robust chocolate flavor plus the rich roast-y magnificent taste of coffee in one single bite, this recipe for french madeleines will suddenly become your favorite too.
French Madeleines are easy-to-do, they’re delicious and you can easily put your touch into it, there are so many combinations you can try, you can make them to taste anything you want, and the scent of recently baked madeleines, ufff! nothing can beat that smell.
To make madeleines you’re going to need the tray to give them the characteristic sea shell shape that these french buttery little cakes have, there are silicone molds but I prefer the old-school metal trays, like the golden crust that cover your cakes is more achievable with steel pans… Well, that has to do more with appearance and a tiny bit with texture too, than with flavor but in case you’re with me on that view, you can find the perfect madeleine pan right here ;D
The key to the ideal French madeleine is temperature, uh-huh! so you have to chill your batter at least for two hours before baking. You can even prepare the mixture the day before and let it rest in the fridge overnight in cling film, the next morning you can pour your batter into the tray and bake, they’ll be awesome :D
Chocolate and Coffe Madeleines
With a robust chocolate flavor and the aromatic scent of coffee these little sea shell bites are built to enrich your days!
- Put the cocoa powder and the coffee granules into a mixing bowl, add the water and mix well. Add the chocolate, the cooled but melted brown butter, the sugar and the egg white and egg, add the vanilla and whisk until combined. Lastly add the flour and the baking powder and whisk. Cover the bowl with cling film and chill for 2 hours to make the perfect batter for perfect Coffee & Chocolate Madeleines.
- Preheat oven over 350ºF (180ºC), spray with cooking oil the madeleine pan, and spoon the batter into it. Bake for 10-12 minutes, allow to cool completely in the pan before removing them. Let cool in a cooling rack and bake the next batch!
- You can keep your madeleines in the fridge up for three days or freeze them for later up to a month ;D
