We continue with the Valentine's special, today I bring you one of my favorite recipes, as everyone knows I'm not a lover of cupcakes, but these red velvet cupcakes melt me, the red velvet are my favorite cupcakes, its flavor is so unique, they are not completely chocolate or vanilla, but its flavor is enhanced, I don't know what it is but I melts me, so I bring one of my most cherished and secret recipes, because only with you I could share this treat that will make that the heart of that special person is melted by you.

These red velvet cupcakes covered with cream cheese frosting are deadly, not literal, but they are very yummy, to give them a super romantic touch I decorated them with rose shape frosting, using a tip (wilton # 104), in the video I'll show you how to do it easily.

The red velvet cake was born at the time of the Second World War, when food was rationed, so to make the cakes look just like that if they had more chocolate they added beets to fix the dark color of cocoa, which along with the vinegar helps, makes it look darker, if you try to make red velvet without the dye you will realize what I say, I asume that a baker added made more red than he should and it ended being red, people liked it that way and then they started doing it on purpose and it eventually changed by using the dye color to accentuate it more.

The fabulous red velvet cake becomes irresistible with these cupcakes, topped with cream cheese and vanilla frosting.

Ingredients

  • 1 cup of sugar
  • 1/2 cup of powder sugar 
  • 1 1/4 cup of vegetable oil
  • 2 eggs
  • 1 tsp. of red food coloring
  • 2 1/2 cups of flour
  • 2 tablespoons of cocoa
  • 1/2 tbsp. of baking powder
  • 1/2 tsp. of sodium bicarbonate
  • 1/4 tsp. of salt
  • 1/2 tablespoon of apple cider vinegar
  • 1 cup of plain yogurt


Instructions

To make our cupcakes start by pre heat the oven to 350 ° F.
Place in bowl of mixer the refined sugar and icing sugar, this combination will make our cupcakes super soft, then add the oil and whisk until the sugar dissolves, then add the eggs and let them cream, we incorporate the dye to the mixture and reserve.

In a separate bowl sift the dry ingredients, likewise combine the yogurt with apple cider vinegar, then incorporate the yogurt to the egg mixture, then add the dry ingredients, mix until everything is well incorporated.

Add the cupcake holders to the mold, then with a spoon of ice cream we add the mix into the molds, in doing so we make sure that all the cupcakes get the same amount of mass. We are going to bake  them for 22 minutes or until a toothpick inserted comes out clean. Let them cool on a rack while you prepare the frosting.

Serves: 24 cupcakes
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 22 mins.
Total time: 37 mins.

Cream Cheese Frosting

Super versatile cream cheese frosting for cakes, cupcakes or cookies.

Ingredients


  • 380 g of cream cheese
  • 1 tbsp. of vanilla
  • 1 1/2 cups of powder sugar

Instructions

Add all the ingredients into the mixer bowl and stir using the the blade attachment, the cheese should be at room temperature when used, it will be easier to mix that way.

Serve: 1 cup
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 00 mins.
Total time: 15 mins.
