Cranberry and Orange Cake

Like it came from a fairy tale, here comes this orange and cranberry cake to say goodbye to the year with a big bang, when I think of celebrating 2014, I want to do it big time, this year has brought me so many nice things, so many learned lessons, I might have not liked some of them but at the end of the day it is something that you have to go thru and what doesn’t kill you makes you stinger, so they were pretty helpful at the end.

 Since I want to celebrate this beautiful year, I bring you this super recipe of orange and cranberry, it is so divine, I’ve never tasted fresh cranberries, and I was in love, they are so good combined with orange, they add a special touch, they are sweeter by the combination, IDK, but really, this cake tastes like Christmas, with a touch of spices that bring it all together creating an unique mud that when eaten, transports you to a fairy tale.

An ideal cake to say goodbye the year, full of citrus and refreshing touches.


• 1 cup of unsalted butter
• 3/4 cup of sugar
• 3 eggs
• 1/4 teaspoon of nutmeg
• 1/4 teaspoon of cinnamon
• 1/4 teaspoon of ginger
• 1/4 teaspoon of cardamom
• 1/4 teaspoon of cloves
• Zest of 1 orange
• 2 cups of flour
• 150 ml plain yogurt


1. Begin by pre heating the oven to 180 ° C. Then cream in a blender the butter and sugar.
2. When the butter becomes pale incorporate one by one the eggs, then add the spices and orange zest, half the flour and yogurt, when everything  is incorporated, add the remaining flour.
3. Pour the mixture in our baking dish and cook for about 40-45 minutes or until a toothpick inserted comes out clean. Leave the cake outside of the oven to cool off and unmold it and when it is completely cold, slice it sideway into several parts to make many layers of filling.
4. Fill with jelly or cranberry sauce and cream cheese, cover completely and garnish with blueberries covered in sugar.

To have a better measurement of the butter, melt it then measure it, then let it cool on the fridge to get a creamy texture on the cake.

To slice the cakes easily, let them rest on the fridge for 1 hour, they will be firm and it will be easier to slice them evenly.

This blueberry sauce or Jam is not only good for this cake, you can eat it with the turkey for dinner, it is to die for with that undisputed bittersweet from the cranberry and the acidity of the orange.

Blueberry  sauce or jam, both sweet and savory will be greatly joined by this sauce.


• 1 cup of blueberries
• 1/2 cup of sugar
• zest of 1 orange
• 1/4 cup of orange juice
• 1/2 vanilla bean
• 1/2 cinnamon stick


To make this  salsa  place all ingredients in a saucepan, then cook over low heat for 10 min, you’ll see how it thickens and becomes divine, let it cool completely before filling the pie.

Serves: 1 cup

Cook time: 00 hrs. 10 min.
Total time: 15 mins.

Cream cheese and orange

A delicious cream that will serve to decorate any cake.


• 380 grams of cream cheese
• icing sugar to taste
• zest of 1 orange
• 1/4 cup of whipping cream
• 1/4 vanilla bean


Place the cream cheese, orange zest and sugar in a blender, blend nicely incorporating the cream and vanilla, stir until it’s all mixed reserve in the fridge until use.

Serves: 2 cups
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 00 mins.
Total time: 5 mins.

You can do the cream and the sauce one day in advance and so the cake will become easier to make. Save them well covered in the refrigerator and you’ll see they will perfect the next day.
