Mexican Antojitos, Sopes and Tlacoyos

Chicken Sopes

This week we continue with 2 super easy and tasty recipes, they are good as snacks or as a starter for a lunch or dinner. This recipes were made specially for the september special that was going to be published on Kena Cocina. It was the first time that I made those recipes and it was a little bit of trial and error,  because you know and new on Mexican recipes, the good thing is that they came out really tasty and I wanted to share them with you.

The first recipe are Chicken Sopecitos, let's say they are a Sopes but more on the light side, because the original recipe has lots of lard, so I made it low fat, they are thick tortillas, topped with beans, chicken, cheese and a lot of other ingredients, they are really tasty and above all, they are easy and quick to make, If you make some of the ingredients before hand, you can have antojitos in a snap of your fingers.


Chicken Sopes 

Ingredients


    • 1/2 cooked shredded chicken breast  
    • 200 g of tortilla dough 
    • 1/2 onion 
    • 1 clove of garlic 
    • 2 serrano chilies 
    • 1 tomato 
    • 3 green tomatoes 
    • refried beans 
    • shredded lettuce 
    • Panela cheese 
    • 1 tablespoon oil 
    • Salt to taste
                          1. We start making the tortillas, divide the dough into 8 equal parts and make thick tortillas, pinch the edges with your fingers and cook the tortillas on a griddle or skillet until golden brown. Reserve.
                          2. To make the sauce liquefy the onions, garlic, chilies, green tomatoes and tomato sauce to get a sauce, if we need, we can add a little water, season with salt to taste. Fry the sauce for about 3 minutes in oil. Reserve.
                          3. To assemble the sopes we spread the tortillas with beans, add a few tablespoons of chicken, a little sauce and topped it with lettuce and some cheese.
                            Yield: 4 people
                            Prep Time: 00 hrs. 40 mins.
                            Total time: 40 mins.

                            This blue corn Tlacoyos are really tasty, the dough has peas, which gives it an unique taste.

                            Tlacoyos Hidalguenses

                            Ingredients



                                • 1 cup of cooked peas 
                                • 500g of blue tortilla flour
                                • 1/4 cup of lard
                                • 2 serrano chilies 
                                • cilantro 
                                • 2 tomatoes chopped 
                                • panela cheese 
                                • 1/2 cup of water 
                                • Salt to taste

                                                1. We start by making the dough, grind the peas either with a mortar or in a food processor. Reserve. 
                                                2. Beat the dough with the lard and form small balls, fill them with a little pea paste and give  it elongated razor-style shape, cook them on a griddle until golden. 
                                                3. We serve the Tlacoyos with chopped tomato, cheese and a little of cilantro, accompany with green sauce.
                                                  Yield: 4 people
                                                  Prep Time: 00 hrs. 35 mins.
                                                  Total time: 35 mins.
