Chicken with Mushrooms

For this Monday we gonna prepare a quick and delicious recipe, as always super easy to make Chicken with Mushrooms. I love this recipe, thin slices of golden chicken, accompanied by a variety of mushrooms, thyme, white wine and fresh parsley, you can eat it with a some rice, a green salad with polenta or like me with some roasted asparagus. 

It's a simple but delicious recipe,  it's ideal for a quick lunch or a light dinner, in less than 30 min. you can enjoy this lovely meal, the best of this dish is that you can accompany different contours and always get a different dish .

If you're like me and you love mushrooms, test this combination of fleshy cremini mushrooms and regular mushrooms, cremini mushrooms give it another touch and depth to the dish and if you do not like mushrooms, you can make the recipe without them and likewise it will stay very tasty. 

The combination of chicken and thyme is a classic, with a thyme scented country feel, it raises the chicken and highlight those earthy flavours, the parsley adds freshness to the whole dish, I love it and combined with white wine is the best. 

Chicken with Mushrooms


  • 4 or 5 chicken fillets 
  • 1/4 cup of flour 
  • Salt and pepper to taste 
  • 1 tablespoon of olive oil 
  • 2 tablespoons of butter 
  • 500 grams of mushrooms 
  • 1/4 cup of white wine (I use Monte Xanic) 
  • 1/4 cup of chicken broth 
  • 1 teaspoon of fresh thyme 
  • 1 tablespoon of chopped parsley

1. Clean and chop the mushrooms. Reserve.
2. Dry the chicken fillets with a paper towel and season to taste, put the chicken fillets in flour and shake off excess.
3. Placing a stainless steel pan with teflon over high heat and pour the oil, then add the half of the butter, cook the chicken fillets until they are cooked through and golden brown. Reserve.
4. In the same pan add the remaining butter and the mushrooms, saute for 5 minutes, then add the broth, wine and thyme, cooking until the liquid is reduced almost completely.
5. Incorporate the chicken and cook for 1 to 2 min, ending with a little of fresh parsley.
