Back to School... Lunchs

School starts in just a few days, even if I have no children, I have many friends that do, so this week I decided to share with you 4 delicious recipes I made for the April issue of Kena kitchen, four recipes Super easy to prepare delicious lunches.

Turkey Ham, Manchego Cheese and Spinach Sandwich 


  • 4 slices of flax bread
  • 8 slices of turkey ham
  • 2 slices of manchego cheese
  •  Baby spinach
  • 1 tablespoon of mayonnaise
  • Salt and pepper to taste
  • 1 tablespoon of Greek yogurt

In a bowl mix the mayonnaise and yogurt, season with salt and pepper, spread the bread with a thin layer, then assemble the sandwiches by placing the manchego cheese, 4 slices of ham for each sandwich and some spinach. Sear on the grill if possible.

Cheese and Salami Hearts 


  • 5 to 6 slices of salami 
  • 3 o 4 slices of manchego cheese and cheddar 
  • 4 slices of sandwich bread 
  • 1 tablespoon of mayonnaise 
  • Cherry tomatoes

  • Cut the bread with cookie cutters in the shape of heart, just add some salami and cheese, spread some mayonnaise on the bread, place alternate layers of cheese with salami, for color and presentation of the sandwiches, cut cherry tomatoes in half and put them together with a toothpick.

Orange Mini Hotcakes


  • 1 cup of flour 
  • 1 tablespoon of baking powder 
  • 1 pinch of salt 
  • 3 tablespoons of sugar 
  • 1 cup of milk 
  • 2 tablespoons of plain yogurt 
  • 1 teaspoon of orange zest 
  • 1/4 teaspoon of cardamom 
  • 3 tablespoons of soy oil 
  • 1 egg

  1. In a bowl mix the flour with the salt, sugar, cardamom and orange zest, then add the milk, egg, yogurt and finally the oil.
  2.  In a hot nonstick skillet, place 2 tablespoons of mixture and make pancakes, cooking them until they are golden brown on both sides.
  3. Serve with some slices of orange and a little maple syrup or honey.

    Bacon, Cheddar Cheese and Mushrooms Muffins 


    • 150 g of flour 
    • 1 tablespoon of baking powder 
    • 100 ml of plain Greek yogurt
    • 4 tablespoons of olive oil 
    • 50 grams of crispy bacon, chopped finely 
    • 30 grams of finely chopped mushrooms 
    • 50g of grated cheddar cheese 
    • 2 eggs

    1. Preheat oven to 180.
    2. In a bowl mix the flour with the baking powder, bacon, mushrooms and cheese, then add the cream or yogurt, oil and eggs, mix well until everything is combined.
    3. Spread the mixture evenly into cupcake holders, place them on a tray and bake for 20-25 min or until golden brown.
