Margarita Cookies


September is a special month here in Mexico, we celebrate the proclamation of the independence and the beauty of this great country,  since I arrived three years ago, I was marveled with the belonging feeling to his people for their customs and their nation, it's great to see how  proud they are to be Mexican. To celebrate being Mexican, today I share with you this tasty Margarita cookies recipe, they are butter cookies with a hint of lemon and tequila, they are very sweet and they allow themselves to be eaten quickly.


Prepare all the ingredients to have everything by hand, you can make the dough in a mixer, in a food processor or by hand. Note that you can make these cookies for your children eliminating the tequila from the recipe. Margarita Cookies

1 cup of flour
90g of unsalted butter
1/2 cup of sugar
1 egg
zest of 1 lime
zest of 1 lemon
1 tablespoon of vanilla extract
1 tablespoon of  tequila 

Sugar Layer
5 tablespoons of sugar
1 teaspoon of  salt

Icing
1/4 cup of powdered sugar
1 tablespoon of  tequila


Place in the bowl of the mixer the butter and sugar, then add the lemon and lime zest, mix very well and incorporates the egg, vanilla and tequila.

In another bowl, mix all the dry ingridientes, combine them well, slowly stir into the cookie dough, mix until you get a soft dough. Take the cookie dough to your hands and form a tube, place it on wax paper and give it an elongated shape doing a roll, close the ends of the paper like a candy and refrigerate the dough for 1 hour or until it´s firm.

Pre heat the oven to 180 ° C. Mix the sugar and salt to make the cookies cover and roll the dough all over with this mixture then cut the cookies, take them to a tray covered with wax paper or baking paper, cook them for 15-20 min or until browned.

To make the glaze, mix the icing sugar with the tequila or lemon juice (to make a children's version) spray the glaze over the cookies and let them dry for a few minutes.

This version are the ideal cookies for parties, I'm sure all your friends will love them, I tested this teory on Saturday, I took them to friend´s house and not even one was left, I hope to enjoy the holidays this month and continue celebrating Mexico.
